Parmesan Crisps
Yield: 6 crisps
These Parmesan crisps could not be easier to assemble and are guaranteed to ‘wow’ everyone at your table, including yourself! Serve them as a garnish on salads, soups, pasta dishes, or double the recipe and enjoy as hor d’oeuvres with hot pepper or sweet garlic jelly. The sweet garlic jelly from Kawartha HERB Gardens is superb!
Ingredients:
½ cup freshly grated Parmesan
Freshly cracked black pepper (optional)
Method:
Preheat oven to 400F. Line a sheet pan with parchment or use a silicon mat.
Using the large hole of a box grater, grate 1/2 cup Parmesan cheese.
Using a tablespoon measure, drop tablespoons of grated Parm 2-inches apart on prepared sheet pan.
Gently press each mound with the back of a spoon into a thin disc (no need to fuss). Crack with freshly ground pepper.
Bake until lightly golden, about 8 minutes. Allow to cool slightly before carefully lifting each crisp with an off-set spatula or a table knife. So simple and delicious!
Variations:
Sprinkle with your favorite chopped fresh herb such as rosemary, just before baking. Dried herbs will also do the trick.
Try 50/50 blend of shredded Parm and cheddar.
