C & D’s Not So Classic Tuna Salad

Yield: Approximately 5 ½-cup servings

Do you ever crave a really good tuna salad sandwich? This recipe is named after friends who shared the ingredients with me.  All I had to say was “yum.”  All I added was the fresh herbs.

Ingredients:

3 184g cans solid light or white tuna in water (because 2 is never enough) drained and flaked

1/3 generous cup mayonnaise  

3 tablespoons sweet pickle relish*

1 heaping tablespoon yellow mustard

1 stalk celery, small dice

½ red pepper, small dice

2-3 tablespoons fresh dill sprigs, torn, or 1/2 teaspoon fresh thyme leaves, finely chopped

Fresh cracked pepper

Pinch of sea salt

Fresh cut chives for garnish 

*Try Iva’s Cucumber Relish from Spade & Spoon, crafted locally here in Ontario.  I discovered it at The Food Shop in Peterborough.  

** The use of fresh herbs is optional.  Use them when in season or if you have them on hand.

Method:

  1. In a medium bowl, combine tuna, mayo, relish, and mustard using 2 forks. Fold in celery, red pepper, fresh herbs, pepper and taste for seasoning.  Feel free to add a little more of this or a little more of that. 

  2. Serve with soft lettuce on fresh or lightly toasted bread.  A little spread of butter or mayo will help hold your sandwich together.

Variations:

  • If you love hot sauce add a few drops.

  • If you like the brightness of citrus squeeze in a teaspoon of fresh lemon juice.

  • If you’re a fan of the brininess of capers, drain, rinse, chop and add!
