Versatile Potatoes

Serving suggestion: 3-4 potatoes per person

We all know how to bake a potato topped with butter or sour cream, chives and salt—delicious. But here’s a fun recipe with a personality to elevate that experience 10-fold.  Serve them as 2-bite appetizers, or in part for a casual dinner.

Ingredients:

  • 1lb baby red skinned potatoes (about 3 servings)

  • Fine sea salt to taste 

  • 1/2 cup Greek yogurt, or sour creme 

  • ½ clove finely minced garlic  

  • Red onion, ½ cup finely chopped

  • Ginger root, 1-inch piece, peeled, and finely minced or grated 

  • Serrano or Jalapeno pepper, half finely diced

  • Chaat Masala

  • Freshly squeezed lime juice

  • Cilantro or parsley, roughly chopped

Note: Chaat Masala is an Indian spice blend used as a garnish sprinkled over snacks and street food. Sour and salty with a bit of heat, it adds a punch of flavor from dried mango, black salt, cumin, coriander and chilies.  Use enough to liberally coat vegetable salads, legumes, and chutneys, or try it on apple slices to get to know it.  If it’s not available from your local grocery store, pick it up at Indian Peacock Inc. in Peterborough.

Method:

  1. Preheat oven to 350∞F.  Place washed and dried potatoes on a sheet pan and bake until just fork tender, approximately 35 minutes.  Allow to cool 10 minutes before handling. 

  2. In the meantime prep toppings.  Factor in a generous teaspoon of yogurt and a sprinkling of each of the other ingredients per potato. 

  3. Place yogurt in a small bowl. Mix in minced garlic.

  4. Using a sharp paring knife, slice an X into the potato leaving the bottom half in tact (do not cut all the way through). Using both thumbs and forefingers, gently squeeze each potato to expose the flesh. Sprinkle each potato with a pinch salt.  

  5. Top with garlic-infused yogurt, red onion, ginger root, chopped pepper, Chaat Masala, a squeeze of fresh lime juice, and parsley or cilantro as garnish.  So yummy!

Variation:

  • Use a combination of cumin, cayenne and extra lime juice in place of Chaat Masala. It won’t replace the tanginess but it will deliver flavor.
