Frozen Fruit Popsicles

Yield: 4-6 depending on size of molds

 
 

Homemade popsicles are delicious at any age!  Typically I make them the virgin way, with seasonal fruit and local maple syrup, but sometimes I add vodka or Rosé wine.  The possible mixes are endless!  Popsicle making can be a fun activity with kids.  My children have fond memories of picking raspberries and strawberries with their great grandfather and making these popsicles with the “fruit” of their labour.  These popsicles would even make a refreshing and easy happy hour treat or dessert.  I hope you enjoy these as much as my family has over the years. 

Ingredients:

4 cups seasonal fruit such as strawberries, raspberries, blueberries, peaches, cherries, plums or watermelon  

1/4 cup maple syrup (can vary depending on preferred degree of sweetness)

1 teaspoon lemon juice

For a creamier popsicle:

  • Add ½-1cup plain full-fat yogurt or sour cream

  • Add ½-1 whole banana

For boozy popsicles:

  • Add 1/2-3/4 cup liquor of choice (not more or the popsicles won’t freeze properly) 

Method:

  1. Combine all ingredients in a blender.

  2. Pour mixture into popsicle molds or Dixie cups, leaving a little room at the top for the popsicles to expand.  Insert sticks and freeze until solid, 4-5 hours. Unmold and serve! 

Variations:

  • Add 1-teaspoon orange, lemon or lime zest.

  • Strain the mixture before pouring into molds for a smooth texture.

  • Stir in chunks of fruit for a chunkier texture.

  • Layer or swirl the ingredients in molds instead of blending all together.
