Tofu Spread

Yield: approximately 2¼ cups

 
 

I’ve been enjoying this recipe for years.  It resembles cream cheese, for vegans and fans of tofu, although not quite the same in texture.  I spread it on toasted bagels and rice cakes.

Ingredients:

1 package organic firm tofu (about 14oz or 400g), steamed

¼ cup tahini (sesame seed paste)

3 scallions, thinly sliced

¾ teaspoon Herbamare*

*HerbamareÆ is a fine sea salt infused with organic fresh herbs and vegetables 

available in health food stores and select grocery stores.

Method:

  1. Quarter tofu and place in stainless steel vegetable steamer basket over gently boiling water.  Cover pot with lid, reduce heat to low and steam 12-15 minutes. 

  2. Transfer cooked tofu to food processor.  Add tahini, scallions, Herbamare and approximately ½ cup steaming water.  Process until a creamy spreadable texture is achieved, approximately 1 minute. Add more steaming water if necessary.  Adjust seasoning and enjoy.

Variations:

  • Enjoy with pita wedges, pita chips or as a tartine on a slice of artisan bread.
