Dandelion Honey Butter by TheDevineKitchen
Here’s a fun recipe for foragers and families alike! Yes, dandelion blossoms are edible (providing they haven’t been sprayed). They are actually quite sweet compared to the plant’s bitter greens. It’s no wonder the honeybees love them! Simply pick a heaping cup of flower heads from a safe area and gently pinch off the yellow blossoms working from the outside in. Enjoy dandelion honey butter on freshly baked bread, toast, and English muffins; with muffins or scones and I bet you’ll be pleasantly surprised. I think they’d be fun to use in baking too. Just make sure you leave plenty outdoors for the bees!

Spring 2021 Leaf and Yard Curbside Collection
Spring leaf and yard curbside collection this year will take place in June. Residents are asked to please place leaf and yard material in dry paper bags. You can keep your bags dry by placing them in a storage shed, or under a tarp until your day of collection. Items placed in plastic bags will not be collected. Please do not rake or blow leaves into ditches. This creates blockage and can cause drainage issues.

Skillet Corn by TheDevineKitchen
My daughter loved this side dish so I’m passing the recipe along. Once again I’m using frozen food during the off-season. It’s simply cooked partially frozen corn in hot oil, alliums and spice in a cast iron skillet.

Fajitas, Margaritas, & Trivia
Every couple of months the Chamber Board of Directors plan an event to bring Chamber Members together. Over the last year, these events have been difficult to plan, especially because they revolve around being social and engaging with others. Last night the Chamber hosted an event over zoom with cocktail creations, a guided dinner with James Mahoney, Chef at The Cow and Sow, and ended with Trivia by Russell from the Fenelon Falls Brewery. It was a great success!

What’s Up With the Sign Wars?
If you have been driving or walking through Fenelon, it is hard to miss the number of signs on storefronts, windows, and sandwich boards calling out other businesses. What started as a spontaneous sign in a Southwest Virginia town, has now turned into a friendly roast across the US-Canada border. The war has reached our small village of Fenelon Falls and our businesses do not lack creativity.

Poached Cod in Tomato Curry by TheDevineKitchen
It’s not quite barbeque season but we’re done with our winter standards. How about frozen fish for dinner? It took me years to figure out that it’s better to cook frozen fish frozen than to thaw it first. Here’s a fabulous poaching recipe to delight your senses, inspired by Bon Appétit. Serve over basmati rice. Brown or white, it’s your choice.
